How To Cook Thai Red Chicken Curry


  1. Coconut milk 1 Cup
  2. Red Curry Paste 2 tbsp
  3. Coconut milk 2 Cups
  4. Water 1 Cup
  5. Chicken Breast 400g
  6. 1 Medium Zucchini, sliced
  7. Fish sauce 4 Tbsp
  8. hai red chilli, sliced
  9. Lemon Leaves 3-4
  10. Fresh basil leaves 10-12

Start by taking two chicken breasts, around 400 grams in weight, and slice them into bite-sized cubes. In a wok or large pan, pour in one cup of coconut milk and cook it over medium heat until it reduces and thickens, creating a creamy base.

Next, add two tablespoons of Thai red curry paste to the wok and mix it well with the coconut milk. Let it cook on low heat for about 2-3 minutes to allow the flavours to infuse. The curry paste adds a wonderful combination of spices, including red chillies, garlic, lemongrass, and galangal.

Now, it’s time to introduce more coconut milk and water to the curry. Add the remaining two cups of coconut milk and one cup of water to the wok, mixing everything. Bring the curry to a gentle boil, allowing the flavours to meld together.

Once the curry is simmering, add the sliced chicken and stir it into the sauce. Cover the wok and let it cook for 6-8 minutes on medium heat, ensuring the chicken is cooked through and tender.

At this stage, introduce the zucchini slices to the curry and let them simmer for an additional 3-4 minutes. The zucchini will add a fresh and slightly crisp element to the dish.

To enhance the overall taste, add one tablespoon of fish sauce, which brings a savoury umami flavour. If you prefer a spicier curry, you can include a Thai red chilli, thinly sliced, for an extra kick. Additionally, add 2-3 kaffir lime leaves or lemon leaves to infuse a citrusy aroma.

Continue cooking the curry on medium heat for 2-3 minutes, allowing the sauce to thicken slightly. This will result in a luscious and flavorful curry with a perfect balance of creaminess, spice, and tanginess.

Finally, it’s time to serve this delectable Thai Red Curry Chicken with Zucchini. Dish it up with steamed or boiled rice, which will beautifully absorb the flavours of the curry and complement the tender chicken and zucchini.
