Minced Beef Tacos with Sweet and Spicy Tomato Sauce

Ingredients
  • 500g beef mince (5% fat)
  • 3 tablespoons extra virgin olive oil
  • 8 small white tortillas
  • 1 onion (sliced thinly)
  • 3 cloves of garlic (minced)
  • 1 tablespoon of chilli paste or 1 fresh red chilli (de-seeded and minced)
  • 2 tablespoons of tomato puree
  • 150g mozzarella (ball or grated)
  • 1 teaspoon cumin powder
  • 1 teaspoon sweet or smoked paprika
  • ½ teaspoon cayenne (optional)
  • 100ml pineapple juice (fresh or canned)
  • salt and pepper (to taste)
Method
  • Add 1 tablespoon of olive oil to a non-stick pan and put on medium-high heat. Fry your beef mince until brown – making sure to stir frequently, add the seasonings, then cook for a further minute.
  • Remove the beef mince from the pan and set aside. Put another tablespoon of olive oil in the same pan, reduce the heat to medium and add onions, adding the same seasonings again. Fry until golden brown then add your chilli paste or fresh chilli as well as the tomato paste. Stirring consistently, add the pineapple juice and leave to boil.
  • Dip the tortillas in the sauce for a few seconds – do not overdo it as can easily rip. Add the beef mince back into the sauce after all the tortillas have been dipped and stir until combined.
  • Add the delicious, minced beef mixture to the tortillas and some mozzarella. Fold in half making sure no minced beef is overflowing out of the tortilla.
  • Place into a clean non-stick pan that’s been preheated on medium-high heat with some olive oil and fry on both sides for a couple minutes.
  • Optional – sprinkle some fresh herbs for serving and enjoy. Bon appétit!
